Oatmeal Chocolate Chip Cookies
For me, these are the taste of childhood. This is my mothers favorite cookie, and we baked them together often. Enjoy!
Recipe
(makes about a dozen and a half)
* = included in the M+R Oatmeal Chocolate Chip Cookie Mix
*1 cup Organic Soft Wheat Flour, or All Purpose
*½ cup organic brown sugar (light)
*¼ cup organic sugar
*½ cup rolled ‘old fashioned’ oats
*½ cup semi sweet chocolate chips
*½ tsp baking powder
*¼ tsp baking soda
*½ tsp sea salt
1 stick of unsalted butter, melted
1 large egg
1 tsp vanilla extract
Instructions
1. Mix together the first 8 ingredients listed in a bowl, set aside. In a microwavable bowl, melt the butter (it melts best when cut in cubes, and heated in 20-30 second intervals).
2. Let the butter cool for a few minutes, then add the egg and vanilla. Whisk together until creamy and smooth.
3. Pour the butter, egg, vanilla mixture into the bowl with the dry ingredients and mix together until all incorporated.
4. Chill the dough in the freezer for about 10 minutes. (this is optional, but it helps the dough stick together better when shaping the cookies. If you skip it, the cookies will spread more when baking, and you’ll get a flatter, crispier cookie)
Meanwhile—Preheat the oven to 350.
5. Take a spoonful of dough (about 2 tablespoons worth) and roll into a ball in your hands, then place onto a parchment lined cookie sheet. Repeat until you have approximately 12, spaced 2 inches or so apart (you’ll have extra dough for a second batch).
6. Bake for 13-15 minutes, until bottoms are brown and tops are set.
7. Let cookies cool for about 5 minutes before enjoying.
