Spelt Brown Butter Blondies
Nutty, rich, sweet-salty, ancient grain, organic…need I go on?
Recipe
Makes about 1 8x8 pan
* = ingredients already included in our Blondie Mix
Ingredients:
*¾ cup Organic Whole Grain Spelt flour
*¼ cup Organic Whole Grain Soft White flour
*1 cup organic light brown sugar
*¾ tsp fine sea salt
*⅛ tsp baking soda
*¼ tsp baking powder
1 stick of unsalted butter, browned and cooled
2 large eggs
1 tsp vanilla extract
½ cup of ‘mix-ins’, optional but recommended
(Examples: milk/dark chocolate chips, toasted walnuts/pecans, toasted coconut, peanut butter-chocolate chips, sea salt caramel chips/butterscotch chips, etc)
Instructions:
Preheat oven to 350
In a small saucepan, brown the butter: turn to medium heat, add the butter and let it melt. Next watch carefully for the lightly bubbling butter to start to form light brown granules (these are the milk solids), then quickly remove from the heat and set aside in a bowl to cool.
Meanwhile, whisk together the dry ingredients (first 6 ingredients listed), or dump the mix into a bowl.
Once the butter is cooled slightly, whisk in the eggs and vanilla extract.
Pour the egg/butter/vanilla mixture into the bowl with the dry ingredients and mix thoroughly.
Fold in a ‘mix-in’ of your choice.
Spread the batter evenly into a parchment lined 8x8 pan, and bake at 350 for about 30 minutes, or until a toothpick inserted comes out clean.
Cool for at least 30 minutes for slices that don’t fall apart.
