Almond Butter Chocolate Chip Bars

A quick fix for your cookie bar cravings.


Recipe

Makes about 1 8x8 pan

Ingredients:

  • 1 cup Organic Whole Grain Soft White flour

  • 1 cup organic light brown sugar

  • ½ tsp sea salt 

  • ½ tsp baking powder 

  • ¼ tsp baking soda

  • 1 stick of unsalted butter, melted and cooled

  • 2 large eggs

  • 3 tbsp of unsalted, smooth almond butter

  • 1 tsp vanilla extract

  • ½ cup of semi-sweet chocolate chips

Instructions:

Preheat oven to 350

  1. Melt the butter in the microwave (30-40 seconds) and then set aside to cool down, about 3-5 minutes. Stir in eggs, vanilla, and almond butter until smooth. Next mix in flour, brown sugar, salt, baking powder/soda. Once smooth, fold in the chocolate chips. 

  2. In a prepared (oiled or w/ parchment paper) 8” pan, pour in the batter and smooth out to the edges. Bake for about 30 minutes.

    Cool for at least 30 minutes for slices that don’t fall apart.
