Pumpkin Spice Pancakes (either with Mix or from scratch)

It’s that time of year... It’s time for everything PUMPKIN SPICE! Cozy up on a lazy morning to these flavor packed pancakes.

Recipe

(recipe makes about 15 medium pancakes)

Ingredients:

  • *2 cups Organic Soft White flour (our All Purpose and Yecora work great too)

  • *4 tbsp organic brown sugar

  • *2 tbsp baking powder 

  • *1 tsp baking soda

  • *1 ½ tsp pumpkin spice

  • *½ tsp salt

  • *3 tbsp greek yogurt (*as buttermilk powder in the Mix)

  • 2 eggs

  • ¼ cup pumpkin puree

  • 2 cups buttermilk (or regular milk)

  • 2 tbsp oil (plus extra for griddle)

  • 2 tsp vanilla extract

Instructions:

  1. Mix all ingredients together in a bowl, then let the batter rest for 10-15 minutes (this helps soften the bran in our whole grain flour). 

  2. Heat your griddle/skillet to medium or medium-low heat. To test heat, add a small amount of oil/butter and make 1 small pancake, adjust temperature as needed (freshly milled flour browns quicker than conventional flour). 

  3. Once your griddle is ready, add oil/butter, and cook the rest of the pancakes—about a ¼ cup of batter will make a medium size pancake—Flip when you see bubbles form, sides appear more dry than wet, and bottom is golden brown. 

  4. Serve with your favorite toppings.
